Winemaking
The South Australian components were harvested during the day. The King Valley grapes were night harvested. Small batch fermentation using Bordeaux yeasts, and transferred to barrel to complete malo-lactic fermentation. The wines were racked from barrel and blended ready for bottling earlier this year.
Colour: Very deep cherry red.
Nose: Lifted cherry and blackcurrant aromas with a hint of mint.
Palate: Blackcurrant, cherry and ripe plum flavours balanced by soft tannins leading to a rich and full flavoured finish.
Wine Analysis: Alc/Vol 14.0%
Peak Drinking: Now - 2012
Food Matches: Morrocan lamb served on cous cous with shitake mushrooms.
Last Word
Merlot is a great foil for cabernet, it brings out the warmth of the fruit without masking the tannins which make cabernet such a great food wine. The wine is rich and textured, making it ideal for most full flavoured foods, yet soft enough to enjoy while preparing your (humble) feast.
