Coming from the renowned Whitfield area in the King Valley, 80% of this wine was fermented in oak. to retain freshness and pure fruit flavours, we did not induce Malo-latic fermentation, we did however, add layers of complexity and texture through regular lees stirring while the wine was in the barrel. The 20% that did not go into barrel was kept cold and had no lees stirring. Combining these components achieved fresh varietal chardonnay character along with some yeasty autolysis and oak integration.
Colour: Mid straw with faint green hues.
Nose: Lifted cashew, peach and nectarine with creamy bready notes.
Palate: Soft and creamy melon-like flavours with pronounced citrusy freshness. Complex fig and light oak flavours fill out the back palate.

Food matches: Baked Atlantic Salmon with stir fried Asian greens
Last Word
If you don't like oaked chardonnay then this wine is worth trying! It has just the slightest oak flavour but is balanced. It is a wonderfully aromatic intensity that is in no way oily or viscous. The style we have made is true to its predecessors' hallmark of being fresh and yet much more then a glass of fruit. With or without food, it's a delicious drink. Like all our whites, it is under screw cap.
